Default 3 way electrical junction... ok?

Can I do a 3 way electrical junction on an outlet? Or is it against code to have 2 wires on 1 screw? There was 2 sets of wires running to an outlet (1 in from breaker, another out to 2nd outlet) , and I am adding another outlet, which will T into that... Can I use an outlet for that junction? Or should I throw a junction box on a stud and split it that way?

One wire per screw. Jump them together with wire nuts and stuff it to the back of the box and add a pigtail to hook up the current outlet. If The box is too tight for that, then either replace the box or stuff the wire in the screw terminal. It is against code to have more than one wire per screw but you might have to do it.
One more option is to buy a15 amp outlet with quick connects. Pop one wire in the quick conncets and leave the other two on the screw connects.
